Does anyone have an Atkin's friendly EASY recipe for a good, hearty soup?

    Try any reasonable Boston clam chowder recipe, but leave out the potatoes and use cauliflower instead.

    Use about 1/2 cut into potato-like chunks and puree half to thicken the soup.

    Love it in the winter....

        Be adventurous!!

        Google and find a "New England Clam Chowder recipe".

        Take out stuff such as milk, flour, potatoes....

        substitute cauliflower and heavy cream

        Under a different profile I posted my recipe in this tribe.. it might be searchable using tribes search engine...

        Well well well.. I found it...

        *******************************************

        Low Carb Clam Chowder

        1 Pint Heavy Cream
        3 Cans Chopped Clams
        2 Cans Chicken Stock/Fish Stock
        2 bunches green Onions
        1 stick of butter
        1/2 Head of cauliflower (whole head for VERY chunky chowder)
        3 bay leaves
        Salt & Pepper to taste

        Start by lightly steaming chopped up cauliflower.
        Melt butter in bottom of pot.
        Add chopped green onions and saute some.
        Drain clams(save juice) add to pan and Saute a little more.
        Add stock and clam juice
        Add Bay leaves
        Allow to simmer on med heat, covered

        Now, seperate pieces of cauliflower into firm and not so firm chunks.
        Cut firm chunks into bite sized pieces.
        Puree' not firm cauliflower into thick liquid

        Add cream and pureed Cauliflower to pot.
        Add firm Cauliflower and simmer a few minutes.
        Salt & Pepper to taste.

          Last night my BF had a craving for some kind of soup. I tried to recall the recipe here and ended up making a version of it mixing cream cheese + water and blending it with the some of the cauliflower. It turned out great. Thanks for posting your version here or I would have never thought about it. haha. :)

            Oh, man, I know I am gonna try this chowder. I LOVE clam chowder, but of course, don't really eat it anymore.

              Word to the wise...

              It's a good soup and pretty low carb, but I doubt it is very induction friendly. I tend to go into ketosis pretty easily, but others may not with this kinda treat. Heavy cream is low carb in small amounts, but using a pint, it adds up. If you are in induction, consider backing off of the heavy cream to a cup.

              Also, you can fry up some bacon, remove and crumble, saute your gr onions in the oil and then return the crumbled bacon to the chowder with the last few ingredients. TASTY!!!

    When I was on the diet, I would buy canned clams and a bottle of clam juice, spice it up with some rooster hot sauce and throw some wakame seaweed into the mix for a yummy, comforting clam soup!
